Mike and I are in our second week of the program Hammer and Chisel! Our muscles are screaming, but our results are really starting to show, and there is nothing better to fuel the muscles than these Oatmeal Pecan Protein Pancakes!
I’ve gotta tell you that following this meal plan has been relatively easy because of how motivated I am by the insane results I am already experiencing!
Like so many people who LOVE traditional pancakes, I wanted to find a recipe that was richer in protein and lower in carbs! I cam across tons of recipes that would call for protein powder but always found the recipe extremely bland.
Mike and I came up with this recipes after exploring quite a few options that called for oatmeal and eggs. So with the handy dandy help of our Vitamix we’ve created this awesome recipe!
It keeps you really full for a couple hours and it is an extremely large serving.
Come hungry!
*We used a Vitamix and set on 4 then 8. A good blender should do the trick for this recipe.
Makes 2 full servings
Ingredients
8 egg whites + 2 whole eggs
1 splash of almond milk
1/2 cup of dry oats
1 cup of strawberries or mix berries
1//2 banana
16 pecan halves
2 tsp almond extract
A handful of spinach
Small dash Himalayan sea salt
1 dash cinnamon
1 packet of stevia to sweeten (optional)
Blend on your vitamix at half speed until all ingredients are finely chopped. Change setting to 7/8 until all ingredients are liquid smooth.
Heat and spray grill top. Pour batter onto grill top and flip when the top sides starts to bubble.
Serve with agave syrup or maple syrup!
Enjoy and share!
