Who Loves Cookies????
I was looking for a recipe to replace a family favorite. I think it’s pretty normal for most families to have an ultimate clean chocolate chip cookie recipe. But they’re often loaded with butter and sugar.
Cookies Cleaned Up? Yes, please! |
So in my quest I found and concocted my own sweet treat.
I mean, if you’re like me, you workout so you can eat the cookie.
Now I can just have more of what I love.
I call this winning!
Ingredients
2 cups almond flour
1 cup coconut flour
1 tsp baking soda
dash of sea salt
1/4 cup melted coconut oil
1/4 cup of maple syrup or agave
1 large egg
2 large egg whites
1 tsp vanilla
1/2 dark chocolate chips
Directions
Preheat oven to 375
Combine flour, baking soda, and salt. Sift and set aside.
Beat oil and maple syrup in large bowl until creamy. This will take about 4-5 minutes.
Add eggs, egg whites, and extract. Beat an additional 2 minutes.
Add flour mixture slowly. Mix until well blended.
Stir in chocolate chips.
Drop by the tbl onto the baking sheet.
Flatten with a spatula
Bake for 12-14 minutes.
Can be stored in an airtight container OR you can eat them warm.
*I adapted this recipe from Fixate Cookbook.
I found that the almond flour itself was really try so I added coconut flour.
Flours can be bought at Trader Joes or Aldis!
