This avocado chicken salad recipe is a staple in the Ursta household. We make a lot of chicken and a lot of times we make a whole chicken that will provide a good bit of leftovers. We will take those leftovers and and make this salad for lunch the next day. It is loaded with protein, healthy fats, and vegetables. Check out the ingredients and instructions below!
Ingredients – 2 Servings
- 2 Baked or Grilled Chicken Breasts chopped or 2 cans of canned chicken (We prefer baked or grilled.)
- 1 Avocado cut into small cubes
- 4 Cups of chopped Romaine lettuce
- 1/2 – 1 Cup of cherry tomatoes
- 4 strips from uncured hormone free bacon cooked and chopped
- 1/4 cup of chopped red or sweet onion
- Fore my dressing, I mix a tablespoon of olive oil, 1 tablespoon of lemon juice, and a little bit of honey or stevia to sweeten it up!
- I add sea salt and pepper to taste
