Taco Tuesday: Ultimate Reset Style

Yep! It’s definitely Day 7 of my 21 Day Ultimate Reset Journey and Mike asked me if I wanted to go to Chipotle for lunch???

Taco Tuesday!

Nope!  And although I am going to forgo the margarita, there is no reason I can’t create my own Mexican Masterpiece here, while doing the 21 Day Ultimate Reset.

The crazy thing is this reset is NOT BAD at all! In fact I feel truly amazing.

  • The caffeine withdrawals are gone!
  • I am down 4 pounds!
  • There is no bloating!
  • My skin is glowing!

And crazy enough as it seems, I am not tempted to “cheat”  at all because I LOVE how good I feel.  As I am about to embark on my 2nd week on the reset, I’ve gotta share one of my favorite recipes!

Southwest Veggie Tacos! (2 Part Recipe!)

Beans and rice 
(Makes one serving)
1/4 can of black beans, drained
1/4 tsp extra-virgin olive oil
1 dash ground cumin
1 pinch chili powder
1/4 tsp group coriander
1 tsp low sodium soy sauce
sea salt to taste

3/4 cup cooked brown rice, hot!

Directions: 
Combine oil, beans, chili powder, cumin, coriander, soy sauce, and alst in a medium sauce pan, and mix well. Heat mixture over medium heat for 1-2 minutes, or until heated through.  Remove from hear. Gently fold rice into the bean mixture.

Southwest Veggie Taco

1/4 medium avocado, mashed
2 TBL salsa
1 1/4 cups of beans and rice (see above)
1/4 cup of corn kernels
1 6 inch corn tortilla 

Combine masked avocado and fresh salsa in a small bowl; mix well. Set aside.  Place black beans and rice and corn on one half of the tortilla; fold. Serve with avocado and salsa mixture!
