I got a lot if inquiries about my newest post on Facebook about the loaded nachos I posted. What better time to blog a recipe about a bar food favorite than the eve of the beloved holiday St. Patrick’s Day!
Look. I am human and totally love bar food. Greasy, calorie heavy, and deliciously sinful, but I hate the way I feel after I eat it. Bloated. Tired. Tummy ache like no other.
Instead of eating that… I cleaned it up! Here’s how I did it!
Ingredients
1 LB of cooked ground turkey (browned, drained, and spiced with your favorite Mexican flavors. We used a packet of low sodium taco seasoning)
onion
1/4 cup Mexican cheese
1/2cup black beans, drained
1/2cup salsa
1/4 cup Greek yogurt
1 cup chopped romaine lettuce
Avocado (ripe)
Directions
After preparing the ground turkey, add diced onion to the meat. Cook for about 2 minutes on low.
Place meat in a 8 inch glass pie place.
Saute ground turkey with a small, diced onion.
Layer with cheese, heated black beans, salsa, Greek yogurt, lettuce and avocado.
*You can serve this with your favorite nacho chips, a toasted pita shell, or forgo the chips and use a spoon for a healthier version!
