So I’ve really been trying to spice up my meal plan recently. Not because I don’t love salads for lunch because I actually really do, but I know that there are times I get stuck in a routine, and I hate when I get bored. Boredom with my meal plans usually lead to digressing from my plans and eating things that really don’t agree with me or my hips.
Usually I have a salad for lunch with some chicken and a touch of balsalmic/ EVOO dressing. But this week, I just didn’t want it!
So I decided to spice uup my salad with this little ditty. Please note, my measurements are close guesses. I am like my grandmother- no measurements just guesses.
Ingredients
1 cup quinoa
1 cup diced tomatoes
1 cup diced cucumbers
1/2 cup chopped red onion
1/2 cup crumbled Feta cheese
3 TBL Red Wine Vinegar
2 TBL EVOO
salt to taste
1 TBL of parsley
1 TBL dill
lemon juice
Directions
Cook quinoa according to the directions.
Let cool.
Add remaining ingredients and refrigerate for at least one hour.
This recipe creates about 4 cups. Each serving is about 1 cup. So you have lunch for almost a week!!
