One of my challengers shared her recipe for clean pizza. Let’s face it, when you want to eat healthy and you are just craving something NAUGHTY, you need a REALLY, REALLY good alternative. That’s how I feel about pizza. What makes pizza so wonderful? Hmmm… it’s quick, it’s easy, it’s cheesy, and it’s perfect for a quick dinner or late night pick me up, right? Well, sure. I just wish my waistline loved it as much as I do!
So this recipe is quick, it’s easy, but your waistline will love it too!
Ingredients
2 large zucchini
2 medium tomatoes (I used roma)
Pizza spices to taste (garlic, basil, oregano, etc)
Your favorite veggie toppings
Fresh mozzarella (2 TBL)
Directions
- Cut the zucchini into 1/4 inch slices and bake them on a pizza stone for 5 minutes at 350.
- For the sauce, I put 2 medium tomatoes, 2 tbsp. onion, a tsp garlic, and some basil, oregano, and pepper to taste into a food processor and made a sauce.
- I put the sauce on the zucchini and added the fresh vegetables and mozzarella. I baked them for another 15 minutes at 350. you can vary the time, depending on how crispy you’d like you “crust”.
- Delicious without the guilt!
